Ingredients:
1/2 large onion, diced (approximately 1/2 cup)
1 teaspoon oil
2 cans pink salmon with stock (skin & bones removed)
1 cup ketchup
1 cup water (or more to desired consistency and taste)
4 red potatoes, partially cooked, peeled, cut into chunks
3 tablespoons chopped parsley (reserve some for garnish)
In large skillet saute onions in oil. Add salmon and stock. Add ketchup and
water. Stir to combine. Add partially cooked potato chunks and parsley. Simmer
until potatoes are fully cooked. Serve alone or over rice. Garnish with parsley.
