1 whole Aku (3-4 lbs.) cleaned, filleted, skin on, head & tail removed
Marinade:
1/2 cup vinegar
1/2 cup water OR 1/4 cup water + 1/4 cup cooking wine
1/4 cup olive oil
1 T. Hawaiian salt
1 T. minced garlic
1 Hawaiian chili pepper (or 2 to spice things up)
1/8 t. pepper
1/8 t. allspice
1/4 onion (thinly sliced)
Combine all ingredients to make marinade.
Place aku in a large plastic bag. Pour marinade over fish and close bag tightly.
Let stand in refrigerator overnight, turning occasionally.
Place fish in baking pan. Pour remaining marinade over fish. Cover and bake at
350ºF for 1 hour. Baste during baking. Serve with marinade.
