French Pipinola Pie
Ingredients:
4 cups pipinola (5-6 pipinola)
3/4 cup sugar
1 tsp cinnamon
1/4 tsp salt
2 Tbsp flour
1 Tbsp lemon juice
2 Tbsp butter
Wash and peel pipinola skin under running water.
Remove all hard skin and seeds.
Cut pipinola into small pieces the size of apple cut for a pie.
Boil the pipinola for about 25 minutes until soft but not mushy.
Pipinola is now ready to be used in the recipe
Mix pipinola with remaining ingredients.
Pour into piecrust.
Topping
1/2 cup butter
1/2 cup brown sugar
1 cup flour
Mix together
until crumbly then put on top of pie.
Bake at 400 degrees for 40-50 minutes.
